The composition of the cuvée is known in France as the assemblage. This means either the common pressing or also the fermentation of different grape varieties in a fermentation tank for the production of wine, or the subsequent combination of batches of wine of different grape varieties or locations.

More than 100 years ago, Carl Jung
Jnr. developed a process for dealcoholization in his family winery at Boosenburg Castle in Rüdesheim am Rhein, Germany. His idea was to extract alcohol at room temperature, with the help of a vacuum technique. Wine aromas were collected separately from the alcohol and reintroduced to the alcohol-free wine.

And it worked! His invention was protected by patent in 1907 and the family has been selling non alcoholic wines to the world ever since. They still swear by the Carl Jung Jnr. method, which only they can use. It guarantees extremely gentle and high-quality production of alcohol free wines.
