"Founded by childhood friends, Maison SASSY is the new, modern face of traditional Norman cider. Our home – the Château de Sassy, Normandy – has preserved the tradition of cider and calvados making since 1852, thanks to our co-founder Xavier, his family and their love for the land.
Our mission is to give pleasure while reinventing the cider market and limiting our impact. We created Maison SASSY to change perceptions of cider through authentic and high-quality handcrafted products."
Discover Maison SASSYWhat inspired you to create Maison SASSY, and how did your journey begin?
"SASSY is a story of two childhood friends with the same passion – Cider. Our co-founders, Xavier and Pierre-Emmanuel learnt to appreciate the true taste of cider, having grown up with it as an integral part of Norman life. SASSY was born out of this childhood passion and desire to put Normandy back on the map. It puts modern spin on a wonderful Norman tradition.
To develop an innovative product, Xavier and Pierre-Emmanuel teamed up with a local producer and a cellar master, together they developed recipes inspired by the cider served at Château de Sassy.
Since our inception, SASSY cider has been appreciated and recognised by the greatest experts. From Alain Ducasse, through to Joël Robuchon or Alexandre Gauthier, many chefs have added SASSY creations to their menus. It is the chefs and mixologists who sublimate our creations in the world's most prestigious restaurants and bars are essential to our development."
How do you approach crafting flavour in your drinks, and what makes your product unique?
Today, the production process is free from additives and concentrates, ensuring a natural and fresh drink and revealing a well-balanced flavour. From the carefully-selected varieties of apples and pears, to the bottling, we are proud to say that everything is 100% locally-sourced.
Our cider brings together craft and creativity, blending authentic Norman provenance with contemporary cocktail culture. Made with 100% natural juice, lower ABVs and fewer calories, SASSY is more than simply cider-it's the perfect aperitif, wine alternative and cocktail ingredient."
What are the biggest challenges you face in producing in high-quality low/no alcohol product?
"One of the main hurdles is preserving the depth of flavour and aromatic complexity that our ciders are known for. Alcohol carries and enhances certain flavour compounds, so reducing or eliminating it can impact the taste profile. To overcome this, we invest in innovative fermentation techniques and carefully select apple varieties that deliver robust flavours even at lower alcohol levels. Additonally, maintaining the natural balance and mouthfeel without relying on artifical additives requires meticulous craftsmanship and a deep understanding of the cider-making process."
How do you envision the future of low and no? Are there any trends you're excited about?
"We envision a bright future for low and no alcohol beverages. There's a growing global trend toward mindful drinking, where consumers seek to enjoy the social and taste aspects of beverages without the effects of alcohol. This shift is driven by a desire for healthier lifestyles and greater choice. We're excited about the innovation this brings to the industry, particularly in experimenting with new apple varieties, fermentation methods, and flavour infusions to create products that don't compromise on taste or experience. The rise of sophisticated, non-alcoholic options in fine dining and social settings is a trend we are eager to be part of and contribute to."
What is one thing you wish more people knew about your product or the low/no alcohol industry in general?
"That SASSy 0.0%, our non-alcoholic cider isn't just sparkling apple juice!
One key thing I wish more people knew about the no/low alcohol industry is the level of craftsmanship and innovation involved. It's not just about removing alcohol–there's a science and artistry behind creating beverages that deliver on flavour, complexity, and experience without the buzz. Brands are using cutting-edge fermentation techniques, unique ingredients, and blends to make drinks that appeal not only to people avoiding alcohol but to anyone who enjoys sophisticated flavours. It's a rapidly evolving space that's becoming much more than just an alternative for those who can't or won't drink alcohol."
