Q&A with David Hodgson
Discover ZenoWhat inspired you to create Zeno and how did your journey begin?
"Will and I launched ZENO Prestige alcohol-liberated wines in December 2022 after 3 years of research and development.
Answering the call for more premium quality alcohol-free wines, we set to work with our winery partner in Spain and our team (including a leading Master of Wine) to create wines for the enthusiast, when they choose to adbstain. Our focus is on texture, flavour, and aromatics, achieving unprecedented results. ZENO wines are also vegan friendly and from single estate organic vineyards in Spain."
How do you approach crafting your flavour in your drinks, and what makes your product unique?
ZENO was born out of a desire to provide high-quality alcohol-free wines, a vision shared by its founders David Hodgson and Will Willis, both wine trade veterans. David, who went alcohol-free for health reasons, and Will joined forces with their partner winery in Spain and a team of experts, including a leading Master of Wine. Together, they embarked on a mission to craft alcohol-free wines that offer mouthfeel and balance of traditional wines.
Their approach is unique; avoiding the common practice of using sweetness to mask the absence of alcohol, they pioneered new techniques to maintain the texture, flavour, and aromatics that wine lovers yearn for. The result is a range of wines that can stand proudly alongside their alcoholic counterparts, whether enjoyed with a meal or on their own.
One of few true "estate" alcohol free wine brands, the ZENO team starts in the organic La Carrasca vineyard in Castille-La Mancha, identifying characteristics of vinification and de-alcoholisation processes. Careful attention to pH levels, acidity, tannin structure, aromatics & sugar levels yield optimal results. Aromatic, vibrant white & robust red grape varietals with defined berry and robust tannin characters give the best results. ZENO has achieved great success with Tempranillo, Cabernet, Grenache, Viura, Macabeo and even the lesser known Bobal for their recently released and widely acclaimed Rosé. On-going research into viticulture and winemaking techniques will enhance sophistication in ZENO wines across the board. Spain was chosen by David and Will because of its rich viticultural heritage, climate, diverse range of grape varietals, advanced sustainability practices, technical resources and proximity to main markets.
What are the biggest challenges you face in producing a high quality low/no alcohol product?
"We focus on texture and aromatics, taking a huge amount of time and effort to make ZENO wines the best for balance, texture, and length.
We also work hard to minimise residual sugar which others may use to "fill in the gaps" with alcohol-free wines. Our latest bottling is just 18g/L which makes ZENO authentic health and nutrition benefiting wines.
We're foodies so our wines need to be the best for food pairing, meaning we use new techinques to enhance tannis and texture."
How do you envision the future of low and no? Are there any trends you're excited about?
"The segment appears to be on a great growth trajectory, with more and more consumers "flexi" or "zebra" drinking and factoring in alcohol-free wines with traditional alcoholic beverages.
Quality is key and we will continue to drive sophistication and choice with ZENO as the alcohol-free beverages rise to consumer expectations.
With 74% of UK adults actively moderating their alcohol consumption and 25% alternating between alcoholic and alcohol-free options during a single outing, ZENO is at the forefront of significant trends. The benefits of choosing alcohol-free options are clear: better sleep, reduced anxiety, and increased productivity. ZENO Prestige alcohol-liberated wines make moderation not only feasible but enjoyable."
What is one thing you wish more people knew about your product or the low/no alcohol industry in general?
"That alcohol-free wines are the not the sweet, simple products that first appeared on the scene. We now have viable alternatives to alcohol wines for wine lover when they're not drinking alcohol."
What makes your drink special?
"ZENO is true "single estate" alcohol-free wine brand, with one team nurturing our wine from vineyard to glass. We have a sense of place, the heart being the organic "La Carrasca" vineyard in Castile-La Mancha, Spain.
