Taste
The taste of DC Red Shiraz is full-bodied and rich, with a bold flavour profile. The dominant flavours are of dark fruit, with notes of blackberry, plum, and black cherry. There is also a subtle spiciness to the wine, with hints of pepper and clove. The tannins are firm but smooth, providing a pleasant mouthfeel, and the oak aging provides a subtle smokiness and vanilla flavour on the finish.
About the Brand
DC (Darling Cellars) Wines is a boutique winery located in the Canberra District wine region in Australia. The winery was founded in 1999 by Peter and Alissa Fergus, who had a passion for winemaking and a desire to create premium quality wines that showcased the unique characteristics of the region.
DC Wines specializes in producing cool-climate wines, such as Shiraz, Pinot Noir, Riesling, and Chardonnay. The winery's vineyards are located in the foothills of the Great Dividing Range, at an altitude of around 600 meters above sea level. This high altitude, combined with the cool climate, provides ideal growing conditions for producing wines with bright fruit flavours, crisp acidity, and elegant tannins.
The winemaking philosophy at DC Wines is focused on minimal intervention, with the goal of letting the grapes and the terroir speak for themselves. The winery uses sustainable viticulture practices, such as organic and biodynamic farming methods, to ensure the health of the vines and the land.
DC Wines has received numerous awards and accolades for their wines, including multiple gold medals and trophies at major wine competitions in Australia and abroad. The winery's flagship wine, DC Block 1 Shiraz, is considered to be one of the finest examples of cool-climate Shiraz in Australia.
Overall, DC Wines is a small, family-owned winery that is dedicated to producing high-quality, cool-climate wines that are true to their terroir. Their wines are a great choice for anyone who enjoys elegant and refined wines that showcase the unique flavours and characteristics of the Canberra District wine region.
