How is non-alcoholic red wine made?
Production of non-alcoholic red wine begins much like traditional winemaking, with the fermentation of grapes to create a standard alcoholic wine. The crucial difference lies in the subsequent step: alcohol removal. This is achieved through a few different methods.
One common technique is vacuum distillation, where the wine is heated under reduced pressure, allowing the alcohol to evaporate at a lower temperature, thus preserving more of the wine's delicate flavours and aromas.
Another popular method is reverse osmosis, which involves passing wine through specialised membranes that selectively separate alcohol from other components.
Finally, spinning cone technology uses a series of spinning cones to gently separate the alcohol through evaporation.
After the alcohol is removed, adjustments may be made to the remaining wine to restore its balance and mouthfeel, as alcohol contributes to these qualities. These processes aim to retain as much of the original red wine's character as possible, resulting in a beverage that closely resembles its alcoholic counterpart.
