Two engineers named Pierre and Vinciane Delcoigne founded the Brasserie des Géants in 1997 at the twelfth-century Castel d'Irchonwelz. In 2000, the first batch of beer was sold. Philippe Gérard established Brasserie Ellezelloise in 1993, which creates the Quintine and Hercule lines. Two to three 15-hl batches can be brewed each day in the brewing room. The Brasserie des Légendes, which was established in 2006 as a result of the union of the Brasserie des Géants and the Brasserie Ellezelloise, is influenced by the rich folklore of their area, particularly the Ducasse d'Ath with its Giant Procession and the Sabbath of the Witches of Ellezelles. Then, in 2019, the Biercée Distillery's operations were transferred to the Brasserie des Légendes.

Best served around 5 °C in a tulip or sommelier glass.
